However, the introduction of food brings with it a natural moisture barrier that keeps the surface of the pans cooler and making it possible for them to withstand significantly higher temperatures without any resulting damage. Even wood burning ovens that sustain temperatures of 900° + are not a threat to the integrity of our pans as long as the food that’s being prepared on them is closely monitored so that it isn’t burned.
